Mild Mauritius Massalé is a complex spice blend that emerged in early 18th century Mauritius with Indian immigrants. This aromatic mix of turmeric, cumin, coriander, cinnamon, and other roasted spices releases magnificent flavours when gently warmed. Traditionally used to season biryani and other Indo-Muslim dishes, it can also be mixed with yogurt as a sauce or added to desserts for exotic warmth.
