These small sardines are sourced exclusively from the Atlantic waters surrounding Galician estuaries using traditional and sustainable fishing methods. Each fish is meticulously hand-cleaned, removing the head, tail, and viscera with care to preserve the delicate belly and skin. The sardines are then washed in brine and individually grilled using time-honoured techniques, before being hand-packed in a carefully selected blend of 85% refined and 15% virgin olive oil. Best enjoyed on toasted bread with fresh tomato, salted butter, and thin onion slices.
