Description
Umami’s Black Garlic is a gourmet product derived from Polesano PDO White Garlic, matured through a month-long process at controlled temperatures (60–77°C) without any additives or preservatives. During fermentation, white garlic loses its sharp, spicy bite and develops a soft texture with sweet licorice and umami flavors reminiscent of balsamic vinegar and soy sauce. This makes it ideal for enhancing meats, fish, cheeses, and vegetables, while being gentler on the palate than traditional white garlic. Use raw in any dish, in pasta and risotto, or blend with oil to create a spreadable condiment.
