Description

Umami’s Black Garlic is derived from Polesano PDO White Garlic using a long maturation process with controlled temperature ranging from 60 to 77°C and humidity for approximately one month. During maturation, white garlic loses its strong, spicy flavor while acquiring a soft texture and distinctive licorice and umami notes reminiscent of balsamic vinegar or soy sauce.
