The dough is left to rest for 12 hours before being slowly cooked to preserve nutrients and achieve an exceptionally thin and crunchy texture. Lady Joseph’s founder, Josephine Bernaud, created these recipes inspired by her childhood in Bordeaux, and her family continues to prepare them using the same extraordinary techniques and local ingredients that made her Salon du Thé legendary.
