This exclusive 1st Day of Harvest extra virgin olive oil is produced at the beginning of veraison when olives are predominantly green, delivering the freshest, fruitiest, and most robustly flavored oil of the season. A coupage of native Valencian varieties blended with Picual olives from Andalusia, it boasts a medium-high green fruity nose with notes of tomato and fresh-cut grass, complemented by medium bitterness and high, persistent spiciness. The oil retains its organoleptic characteristics longer than any other harvest and is rich in nutrients and antioxidants. Cold-extracted using purely mechanical means, this is a limited-production offering of exceptional quality.
