Description

Ashanti or Gorilla pepper is harvested wild in North Congo, growing on vines that climb trees over 20 metres high. The Bayaka people hand-pick these small round berries from October to December, then scald them in boiling water to cleanse, sterilise, and stabilise their rich cardinal red to dark crimson colour. Each pepper features a distinctive firm tail and white milky pulp surrounded by a pale green fleshy layer. With delicately balanced spice notes of clove and nutmeg wrapped in fragrances of pine resin and juniper, this pepper develops fresh menthol and citrus notes when cracked or heated, offering a gentle attack on the palate with subtle fizzy freshness.
