These premium small sardines are exclusively sourced from the Atlantic waters surrounding the Galician Estuaries using traditional and sustainable fishing methods. Each sardine is meticulously hand-cleaned, removing the head, tail, and viscera with care to preserve the tender flesh. They are then washed in brine and individually grilled using time-honoured techniques before being packed in a carefully balanced blend of 85% refined and 15% virgin olive oil infused with hot pepper and salt. Stored in cool, dry conditions, these preserves maintain their quality for up to 6 years.
